I also agree with the envy you feel towards the European way of &quot;grocery&quot; shopping. I myself have decided to team up with the organic farmers in my area. When I heard a woman ask the intern at my local farmstand, of beets with tops, &quot;How do you cook these? Is this the same thing in the can?&quot;, I realized that as a chef I think we need to do more than shop at Farmer&#039;s Markets. Education &amp; awareness is critical to this change most of us are striving for.</description>

Not a big fan however of cutting them up when they are still alive, although I have done it many a times. As I meantion in the port I boil for about 8 minutes and then chill. Once it is chilled I then chuck the meat.</description>
