Baja Fish Tacos

The first time I heard of fish taco I was a bit confused. Being from New England I was only use to Beef Tacos or even Chicken Tacos. But after I had my fish Baja Fish Taco, I fell  in love.salsa.jpg

Both my wife and I lived in California at different times prior to getting married. I live in San Diego, that’s were I had my first fish taco, and she live in the Bay area.  So we both enjoy a good Baja fish Taco. And today seemed the perfect day.

So off I went to the market to get what I needed. I didn’t make a lime sour cream,  just a good Pico de Gallo, Guacamole and Cabbage with Corn Tortillas and Grilled Snapper.

Pico de Gallo

  • 3 ea. Plum Tomatoes, diced
  • 1/4 red Onion, Fine Diced
  • 3/4 Jalapeño, Minced
  • 1 Lime, Squeezed
  • 1 tsp.Chopped Cilantro
  • Salt & Pepper

Mix all ingredients

 

Guacamole

  • 1 Ripe Avocado, Mashed.
  • 1/2 Lime, Squeezed
  • 1/2 Jalapeño, Minced
  • 1/2 tsp. Cilantro, Minced
  • Salt & Pepper

Mix all ingredients

 

I brushed the Snapper with a little Olive Oil, some Chipotle powder and of course salt & pepper. Then grilled on char broiler for about 8 minutes until done. Severed everything up with some  warmed flour tortillas and we were in business.

What a great dinner, light, fresh and simple. Could I have got something as good at a Mexican Restaurant around here, not sure. But, I do know it would have cost much more than the $12.06 is cost me to make it!
