Summer, Not yet!

It still doesn’t feel like summer here as we have rain once again. But that doesn’t stop me from making it feel like summer, so in come the heirloom tomatoes, basil, mozzarella, Spanish Olive oil and Aged Balsamic for the perfect summer salad.

On the way home from our Fourth of July celebration (one of the few nice days we have had) the next morning we were passing by a Trader Joes. It it about 25 minutes from our house and the only relatively local decent non-big-box grocery store in the area, we didn’t want to pass on the opportunity. It is pretty sad when I say that, but it is the truth. Yes the local grocery stores are barely tolerable, but to get anything out of the ordinary we have to travel. Some of you might say that Trader Joe’s isn’t all that special (my the way I don’t disagree) but there is NOTHING else around.

 

Anyways back to my trip. So we stocked up on some oils, meats and some “treats” but while in the produce section there were some heirloom tomatoes that I couldn’t pass up. Grab some basil and some fresh mozzarella and we were in business.

  • 2 # of mixed baby heirloom tomatoes from Trader Joes
  • 8 oz. Fresh mozzarella
  • 8 Basil leaves
  • 1/4 c. Spanish Olive Oil
  • 2 tbls. Aged Balsamic
  • Salt and Pepper
  1. Mix all ingredients in bowl, season with salt and pepper and let marinate for 30 minutes.
  2. Server as a dinner salad for two or an appetizer salad for four.

    Mmm!! Tomatoes! Don’t feel bad about having to travel for decent selections. The Trader Joe’s closest to me is in bloody Connecticut! What can you do? You got to get the food, right? I have three health food stores I like, all in different towns. I can easily spend two hours driving between the three;)
