Can’t Grill Enough

It is Labor day weekend and I was just thinking yesterday that you can’t ever grill enough. I would grill in the winter if I could get to my grill. Maybe this year I will try and put it in an area I can! Now I am just rambling.

So this weekend I was determined to cook on the grill a few times. Last night we had some great grilled vegetables. Pepper, Asparagus, Onions, and Potatoes. I kept it very simple. Everything just tossed in Extra Virgin Olive Oil and some Smoked Spanish Paprika, Salt and Pepper. That’s it.

As you can see we also had some fish that I was going to grill as well. Nothing special or note worthy but it was some Mahi Mahi.
