So, I like to cook, but sometimes keeping it simple is hard to do for me. But every once in awhile I pull out the crock pot and keep it really simple. Add everything in one pot, turn it on and walk away. Watch the US Soccer team today or NASCAR at my home track at NHMS. Sit back and relax. Let the crock do the cookin’. It doesn’t get much simpler than that!
Well, there is one catch, it is best that the meat gets marinated one day in advance. It’s not required but it just makes a better dish. I serve it with some steamed rice and flour tortilla. That’s it. Pull out you favorite hot sauce and you’re in business. Read the rest of this entry »
The last few days here is has actually felt like summer. I had heard on the radio that 11 of the last 14 days prior to Friday had been raining. That’s a lot of rain and no sun shine! But yesterday was a great day, beautiful, warm and clear sky’s. When summer is here it instinctively feels like it is time to eat seafood.
We contemplated going over towards the ocean, but we were probably not the only ones that felt the way we did. Plus eating out on a Saturday night, in my opinion, is a bad choice all together. So, as mostly everyone out there we are watching our budget pretty close. As one of our biggest expenses is food (I wonder why), my wife offered me a challenge last night. Go to the store and buy dinner for the two of us for less than $10!
As I am a competitive person and like challenges I said no problem! So, off to the store I went. On the way many things passed through my head. I am pretty sure a good steak dinner was what the Doctor ordered, it is June 18th so I figured we could grill up some steaks, but mother nature wasn’t cooperating. So, instead we did a few pepper crusted NY Sirloins seared with some Tarragon – Roasted Garlic Butter and some steamed Broccoli.
It was pretty tasty, although grill might have been better. But what made the steak so much better was,of course, the butter! Compound butters on steaks, chicken, seafood or pork always seem to take it up one notch. Read the rest of this entry »
This isn’t little Little Cesar’s, but I made a great homemade pizza last night. Sorry it took some time to get it up here, but I actually had to work today. But, that’s life I guess right?
Anywho, for whatever reason yesterday afternoon I had this craving for pizza, but it wasn’t the normal craving for pizza, it was thin crispy crust, fresh ingredient and piping hot! So, I had to make my own I guess.

The first time I heard of fish taco I was a bit confused. Being from New England I was only use to Beef Tacos or even Chicken Tacos. But after I had my fish Baja Fish Taco, I fell in love.
Both my wife and I lived in California at different times prior to getting married. I live in San Diego, that’s were I had my first fish taco, and she live in the Bay area. So we both enjoy a good Baja fish Taco. And today seemed the perfect day.
So off I went to the market to get what I needed. I didn’t make a lime sour cream, just a good Pico de Gallo, Guacamole and Cabbage with Corn Tortillas and Grilled Snapper.

Food Inc. the movie debuts this weekend in select locations. It has been dubbed as the “Inconvenient Truth” of the food industry. I personally hope it changes some things. As a former professional Chef I know that food here in the U.S. is shipped thousands of miles, preserved, irradiated, pasteurized and genetically modified beyond the average persons imagination. If people knew what is actually done to their food I doubt most people would want to eat it.
But that’s what we demand. We don’t demand fresh, we don’t demand natural products or chemical free products, we don’t demand food that actually taste good just food that is convenient, that we can but in the big bx store and we can buy once a week and cook in the microwave.

Well, here in New England it sure doesn’t feel like summer will be here anytime soon but it is June 11th, school is almost done and summer camps will be starting shortly after so summer must be coming, right?
So with that in mind I figure I would post a simple recipe that everyone enjoys making, even me the non-sweets guy. Vanilla Bean Ice Cream! This is a scaled back version of the one we use to make at the restaurant, but should make about 1 Qt. of finished ice cream. The key is to make sure you have a quality beans, chill the “custard” for at least 3 hours but preferable for 24 hours and have an ice cream machine that wont add too much air during the freezing process. Some machines will freeze the ice cream much quicker than others that’s because they whip more air into the custard. Me, I like my ice cream rich and creamy, not light and fluffy.
